Salmon soup (irish traditional soup)

A very popular soup in Ireland. If you have the chance to go to Ireland it use to appears in the restaurant menu as "fresh salmon chowder ." I took this recipe from an Irish newspaper and the result is very similar , if not equal , that the one I ate on the island.

INGREDIENTS (4 people) :

800 grams  - 1 kg  / 1.76 Lb - 2.2 Lb of fresh salmon ( or frozen if fresh is not available) .
3 tablespoons butter
Half cup diced celery
Half cup diced carrots
A quarter cup of finely chopped onion
2 tablespoons flour
2 cups chicken broth
2 cups of diced potatoes
1 cup peas
2 glasses of milk (whole or semi-skimmed milk , to taste)
2 cups of grated cheddar cheese
1 tablespoon chopped parsley
salt
pepper

Melt the butter over medium -high heat in a saucepan.

Then add celery, carrot and onion , sautéing for about ten minutes ( until the vegetable is tender ) .

Pour the flour and mix well . This will thicken the soup.

Add the broth and potatoes cut into cubes.

Bring to a boil over low heat, stirring frequently .

We cover and bake for 15/20 minutes.

Add salmon and peas ( frozen are better and use the small ones to get tender easily) , cooking for another 5 minutes.

We incorporate the milk, stir well and add the cheese and parsley . Melt cheese well and continue cooking for 10 minutes.

Serve very hot and enjoy.
